Mount Haven’s recent revamp has seen their new restaurant hit Cornwall’s foodie spotlight. Small plates full of style, an innovative menu using the best of local produce and above all, mouthwatering flavours you won’t be forgetting anytime soon. Here, we discovered more from the man behind the magic, Mount Haven’s Head Chef, Ross Sloan.
Hi Ross! Thanks for chatting to us here at myCornwall – please tell us a little bit about yourself and life at Mount Haven.
Hi! Okay, so I’m the Head Chef at the Mount Haven Hotel in Marazion, part of the St Aubyn Estates portfolio. Some people know me as Ross Wright too! The Mount Haven has had a huge refurbishment of the restaurant and terrace, totally transforming the dining area. I am very lucky to work for a company who are dedicated to investing in me, my team and the hotel. I work at a hotel which has one of the best views in Cornwall – if not the UK – overlooking St Michael’s Mount and beautiful Mount’s Bay. Life as a chef can be demanding, especially with the national shortage of chefs, and I do have to find a balance between a job I love and spending time with friends and family – but when you work in a restaurant, you develop a surrogate family with your team and that’s a really important relationship.
Tell us about your menu. What were you thinking when you devised it and what are your key focuses?
We wanted to develop an offer at the Mount Haven that means people will see it as somewhere equally as suitable for a relaxed drink with friends as it is for a special occasion. The bar and terrace are all about creating a relaxed and informal atmosphere where you can just drop by to enjoy our bar snacks and small plates. We have been working with Marcis Dzelzainis, from Sager & Wilde and Fare Canteen in London, to produce a unique cocktail offering to run alongside our Terrace Bar menu. The guy is a genius and a top bloke too. You must try the Meadowsweet Martini made with Black Cow Vodka, meadowsweet, apricot and verjus. It’s the best cocktail you’ll taste! I feel that what we’re developing in the Terrace Bar is something really special.
Then, the Mount Haven Restaurant downstairs has been opened up with a wonderful view over the Bay towards the Mount and is an incredible space. This is where I showcase more extravagant dishes and tasting menus. We are really trying to focus on sustainable cooking and trying to be as zero waste as possible. Here, you can sample starters such as Newlyn crab with nettle gazpacho, Granny Smith apple, and dulse powder or beef tartare, ponzu, heritage carrots and sorrel. Mains on the a la carte menu include Creedy carver duck & sausage, beets, chard, shallots & ice wine verjus or steamed brill, mussels & clams, seaweed, sea cabbage and smoked buttermilk.
Ultimately, I’m trying to present beautiful creations with local ingredients that taste incredible.
How would you describe your cooking style?
I would say I tend to be quite off the cuff. I am inspired by nature and the environment around me. I believe wholeheartedly in taking a ‘farm to table’ approach. I also tend to mix different culinary techniques and influences, and I hope this makes the dishes I create unique and exciting.

What can visitors to Mount Haven expect from your food?
I am focusing on using small local farms and sustainable producers who are coming out with some really great ingredients. We need to support these people and our local businesses. They are our future – a sustainable, better future. I’d say we produce food that is adventurous, modern, British, and inspired by nature. I think they’re really imaginative dishes and I make sure we use the freshest of ingredients available here in West Cornwall.
Finally, what ingredients couldn’t you live without?
Beetroot! I absolutely love it and can’t get enough of it.
